Dr. Seuss birthday was today so we decided to have a Dr. Seuss day. The girls played on Suessville.com while I got ready to go into town. Neapolitan Eggplant Parmesan or Eggplant pizza We made eggplant pizza because McKenzey said she had never had eggplant – so found the easiest recipe online and we made it. The girls decided to make an impression book. They found crayons and ripped all the paper off and then ran around the whole yard and made an impression of every different texture they could find. he Kid approved meal with a meatball sandwich with yellow squash dippers. McKenzey decided to help me make dinner and then we took pictures of her food creations.
