This is the easiest crockpot dinner,Vegetable Lasagna. I found a recipe on Eatingwell.com – called Slow cooker vegetarian Lasagna. I of course edited the recipe a bit and it turned out great but you might want to refer to the original.
Easy CrockPot Vegetable Lasagna

Ingredients
- Crockpot
- slow cooker liner – for easy clean up
- lasagna noodles – not cooked
- 2-3 bottles pasta sauce
- 1 – 15-16-ounce container ricotta
- 2 zucchini chopped
- 2 yellow squash
- scallion – we used a whole bushel
- pepper/garlic salt/pirate salt (for some kick)
Instructions
- Put pasta sauce in bottom – just enough to cover in a single layer
- place uncooked lasagna noodles over spaghetti sauce
- layer of ricotta cheese – cover noodles
- layer of vegetables, onion and spices
- add spaghetti sauce again
- repeat starting at 2 (lasagna noodle) – we did 2 layers
- finish with spaghetti sauce
- we added shredded cheese on top
- cook for 6 hours on low
