Since summer has begun and we are staying up late and sleeping in the morning. I thought it would be fun for the kids to make colored lemon pancakes.  These pancakes are so easy that kids can make them by themselves with our new induction cook top. My kids love using our new induction cooktop which boils water in minutes and as soon as you remove the pan the top is instantly cool, so it is great for kids. I actually loved it so much that we took out our oven and stove top to make storage in that area (I promise to show more on that later, we are still working on it).

Easy Lemon PancakesI included two recipe versions, one that is super easy for kids and a sleepy mom or dad.  I also included the adventurous one for those avid cookers.  I personally like the easier one because life should always be easy.

Scratch Lemon Pancakes
Scratch Lemon Cake mix
Ingredients
  • 1 cup all purpose flour
  • 1 Tbsp sugar
  • ½ Tsp baking soda
  • dash salt
  • 1 cup milk

Instructions
  1. In a large mixing bowl, stir together the flour, sugar, baking soda, and salt. Using a whisk or large fork, mix in milk, one - two lemon drops, and egg until well combined and smooth. Stir in the melted butter. Spoon a little of the batter into small bowl add color - several drops till get colored desired. Spoon onto convection oven high max-sear. Cook till light brown on each side. Serve with maple syrup, melted butter, or peanut butter (Munchy’s favorite).
